These Peanut Butter Caramel Protein Brownies are not only incredibly chocolaty and moist but also packed with plant-based protein. Ingredients for 1 tray (approx. 20x15 cm):
- 1 can of cooked chickpeas (240g)
- 160g water (or chickpea water from the can)
- 130g dates
- 55g peanut butter
- 60g ground oats
- 40g cocoa powder
- 0.3 tsp baking soda + 1.5 tbsp vinegar
Caramel:
- 2 Protein Peanut Caramel RAWBITE bars
- 75g water
👉 Here’s how it’s done:
Preparation: If you don’t have a high-speed blender, soak the dates in hot water for about 10 minutes.
- Mix the dry ingredients.
- Blend the chickpeas, water, dates, and peanut butter until smooth.
- Add the blended mixture to the dry ingredients and gently mix everything with a whisk. Avoid blending as this may prevent the batter from rising.
- Spread the batter evenly into the tray.
- Bake the brownies at 180°C (fan-assisted) for 30 minutes.
- For the caramel: Blend the RAWBITE bars with the water and use this to decorate the brownies.
TIP: The "caramel" also tastes amazing in muesli or on bread.
TIP: These brownies are also delicious with berries (e.g., raspberries), a drizzle of melted dark chocolate, or a scoop of vegan vanilla ice cream.
