This year, take your dessert game to the next level with a simple yet luxurious layered dessert. Our latest recipe featuring RAWBITE bars, created by Sarah Maria Straub (known from Instagram), combines fresh orange, velvety chocolate, and creamy cashews—perfect for Christmas or New Years!

You can serve this dessert to your guests or simply treat yourself. It’s the perfect way to celebrate the magic of the season with an extra touch of deliciousness!

Ingredients (for 4 glasses):
  • 3 Orange Cacao bars
  • 200 g soy yoghurt (or other plant-based yoghurt)
  • 100 g cashew butter
  • 30 ml (freshly squeezed) orange juice
  • 2 tbsp puréed dates or syrup
  • 1 tsp cinnamon
  • 1 pinch of nutmeg (make sure to add this—it’s a gamechanger!)
  • 0.5 tsp vanilla powder
  • Freshly grated orange zest
  • 50 g chopped dark chocolate or cacao nibs
Instructions:
  1. Crumble the RAWBITE bars into small pieces, place them on a baking tray, and bake at 160°C (fan setting) for 7–8 minutes until lightly golden.
  2. For the cream: Mix the yoghurt, cashew butter, orange juice, date purée, cinnamon, nutmeg, vanilla, and grated orange zest together until smooth and creamy.
  3. Assemble the dessert in glasses: Start with the baked RAWBITE crumbles (about 16 g per layer, so it’s enough for 4 glasses with 2 layers each). Then add about 2 tbsp of the yoghurt-cashew cream and a layer of chopped dark chocolate or cacao nibs. Repeat the layers and finish with a layer of cream.
  4. Decorate the dessert with chopped chocolate, orange pieces, or a sprinkle of cinnamon or cocoa on top.
  5. Place the glasses in the refrigerator for at least 2 hours—or even better, overnight—so the flavors can fully develop.
