RAWBITE Salad

As an example of a vegan dish for the buffet, Asta Schack has created this delicious salad with grilled Hokkaido pumpkin, pomegranate seeds and RAWBITE Apple Cinnamon. Try it yourself!

Ingredients:

1 Hokkaido pumpkin

2 tsp. olive oil

1 pomegranate

4 Falafels (ready-made or homemade)

1 RAWBITE Apple Cinnamon

Lemon juice and olive oil

Fresh rosemary

Salt and pepper

Instructions:

Preheat the oven to 200 C°. Slice the pumpkin in half and remove the seeds. Then cut it into smaller pieces and place them on a baking tray with baking paper. Dip in a little olive oil, sprinkle with salt and pepper and place the fresh rosemary next to it on the baking tray. Bake the pumpkin for approx. 20 minutes in the oven. 

Warm the falafel at the same time. Slice the pomegranates and shake out the seeds and set them aside. Cut the RAWBITE Apple Cinnamon into small pieces. When the hokkaido is done, take it out and place it on a plate. Add the pomegranate seeds, the warm falafels and the RAWBITE pieces. Finally, you can pour a little lemon juice and a little olive oil over it.
