Makes: about 20 cookies (depending on size)

Ingredients:

  • 1 1/4 cups all-purpose flour (180g)
  • 1 tsp salt
  • 1 tsp baking powder
  • 230 g butter
  • 130 g brown sugar
  • 70 g regular sugar
  • 2 tsp vanilla powder
  • 1 egg
  • 1 egg yolk
  • 1 tsp espresso powder
  • 4 RAWBITE LIME bars
  • 10 g freshly grated ginger
  • Grated zest of half a lemon

Instructions:

  1. Melt and brown the butter, then allow it to cool. In a bowl, mix the sugars, butter, espresso, and vanilla thoroughly for 5–7 minutes until well combined. Once smooth, add the egg and egg yolk.
  2. Add the flour, salt, and baking powder, and mix again until well combined.
  3. Chop the RAWBITE bars into small pieces and add them to the mixture along with the ginger and lemon zest.
  4. Shape your cookies however you like – classic flat, round cookies, squares, triangles, or use holiday cookie cutters.
  5. Bake at 180°C (350°F) for 12–14 minutes.
