When the first frost sets in and the air smells like winter, there’s only one thing to do: head inside, get cozy, and turn on the oven!
The wonderful Rosa Roderigo from @rosakochtgruen created this delicious vegan recipe that tastes like winter, comfort, and pure indulgence.
The scent of cinnamon, baked apples, and roasted nuts fills the kitchen – and as a little surprise, there’s a fruity, nutty RAWBITE Apple Cinnamon bar tucked inside. Perfect for anyone who loves natural sweetness and cozy winter treats.
Here’s what you’ll need for 4 baked apples:
- 4 tart apples (e.g. Boskoop, Granny Smith, or Jonathan)
- Lemon juice
- 80 g pecans
- 120 g raw marzipan
- 80 g vegan butter
- 2 x RAWBITE Apple Cinnamon
- ½ tsp cinnamon
- 1 pinch of salt
Topping: Vegan vanilla ice cream and chopped roasted hazelnuts – because it’s simply divine!
How to make it:

Prepare the apples
Core the apples generously and drizzle the inside with plenty of lemon juice. This adds a fresh touch and keeps them from turning brown. -
Roast the pecans
Roughly chop the pecans and roast them in a dry pan – this step is a must, the roasted aroma is a total game-changer! -
Make the filling
Mix the marzipan, vegan butter, cinnamon, and salt with your hands or a fork. Chop the RAWBITE bars into small pieces and add them to the mix, along with the roasted pecans. -
Fill and bake
Stuff the apples all the way to the top with the mixture. Tip: if you want to prevent the skin from bursting while baking, lightly score a line around the middle of each apple.
Bake at 170 °C (fan oven) for about 20 minutes. -
Serve and enjoy
Serve warm with a scoop of vanilla ice cream and a sprinkle of chopped, roasted hazelnuts. A perfect dessert moment!
